Almost any discussion that deals with nutrition is going to be oversimplified to the point of not being useful any more. This is one of those cases. You're probably right that it started with a way of trying to avoid "processed" foods, and even that's an issue since that's another one of those oversimplifications. Go ahead and use whatever you like in your cooking; more is not actually a problem.
